Kesar Malai Ladoo
Ingredients:
1 cup paneer (cottage cheese), crumbled
1/2 cup khoya (mawa)
1/2 cup condensed milk
1/4 cup powdered sugar (adjust to taste)
A pinch of saffron threads
2 tablespoons warm milk
1/2 teaspoon cardamom powder
2 tablespoons chopped nuts (almonds, pistachios, and cashews)
1 tablespoon ghee (clarified butter)
Instructions:
Prep the Saffron:
Soak the saffron threads in 2 tablespoons of warm milk and set aside.
Prepare the Paneer and Khoya Mixture:
In a heavy-bottomed pan, heat the ghee over medium heat.
Add the crumbled paneer and khoya to the pan. Cook, stirring continuously, until the mixture becomes smooth and starts to leave the sides of the pan. This should take about 5-7 minutes.
Add Condensed Milk and Sugar:
Lower the heat and add the condensed milk and powdered sugar to the mixture. Stir well to combine.
Continue to cook for another 5 minutes, stirring continuously, until the mixture thickens.
Add Saffron and Cardamom:
Add the saffron milk and cardamom powder to the mixture. Mix well and cook for another 2 minutes.
Add Nuts:
Stir in the chopped nuts and mix well.
Cool the Mixture:
Remove the pan from heat and let the mixture cool slightly until it is warm enough to handle.
Shape the Ladoos:
Grease your hands with a little ghee.
Take small portions of the mixture and shape them into round ladoos.
Garnish and Serve:
Place the ladoos on a serving plate and let them cool completely.
You can garnish the ladoos with additional chopped nuts or a few saffron strands if desired.
